It's about that time of year!

Parties and events are in the works - plans being made - and it's time to start putting some serious time into determing -what to eat! Buffets are a great option for gathering - especially if you want some flexibility in the numbers of your attendees. Here are a few tips for you to consider if you are thinking buffet, and in this economy, it can be a blessing in disguise:
  1. One general rule is this: Prepare more food if you are having a buffet rather than a sit-down meal; guests tend to eat more from buffets. However, the more selections available, the less people will take of any one item because they want to taste everything. This gives you the option of adding more appetizer types of offerings - and less heavy expensive meats. Don't serve appetizers before - save the money and add a few smaller items to the buffet itself.

  2. For a buffet serving 25-30 people, a good basic menu includes two casseroles in 9"x13" dishes (or one casserole plus meat—turkey, ham, beef), two salads (about three heads of lettuce per salad), rolls (one per person), and two to three desserts. Multiply this for every 25 people you add.

  3. Meat amounts can be tricky, but here is a general guide: for 25-30 people, have a fifteen- to eighteen- pound turkey, OR a six- to seven-pound boneless ham, OR a twelve-pound roast beef.

  4. For serving pasta, calculate about two ounces per person if it's being served as a side dish or as one selection on a buffet table, about four if a main course.

  5. When planning beverages, know your crowd; in general, though, calculate about one drink per hour for each guest. For a party where guests will be standing/moving around a good deal, plan on four to five drinking cups per person. For ice, you'll need about one pound for every four to six guests.
Want to really enjoy the event with your guests? Consider getting it catered. You will often be surprised at just how reasonable it can be. Discuss your budget and guest count with your on-site caterer. They are known to be exceptionally flexible and willing to work with you - just remember they are the professionals and will take care of your needs if you allow them. Believe us when we say - having it catered will provide you the bonus of a true social gathering - without thought to anything other than having a great time!

October 3rd - Mooncake Festival



Mooncakes - a delicate strong Asian tradition you might want to give some thought to... We found some stunning examples to help inspire you. This year, the Chinese people celebrate the Mid-Autumn festival with dances, feasting and moon gazing on October 3rd. Step into the wonders of these remarkable pastries at a local Chinese bakery.

These little cakes earned their popularity during the Yuan Dynasty (1200 A.D.- 1368 A.D.) It is said that mooncakes - which the Mongols did not eat - were the perfect vehicle for hiding and passing along plans for the rebellion. Families were instructed not to eat the mooncakes until the day of the moon festival, which is when the rebellion took place. (In another version plans were passed along in mooncakes over several years of Mid-Autumn festivals, but the basic idea is the same).

Roughly the size of a human palm, these mooncakes are quite filling, meant to be cut diagonally in quarters and passed around. More elaborate versions of mooncakes contain four egg yolks (representing the four phases of the moon). Besides lotus seed paste, other traditional fillings include red bean paste and black bean paste.
Today, mooncakes may be filled with everything from dates, nuts, and fruit to Chinese sausages. More exotic creations include green tea mooncakes, and ping pei or snowskin mooncakes, a Southeast Asian variation made with cooked glutinous rice flour. Haagen-Daz has even gotten into the act by introducing a line of ice cream mooncakes in Asian markets.

Just Peachy ! ! !

Thank you to "Bon Appetit" for their inspiration for you. All of the recipes for these beautiful items can be found there. These summer days bring mental notes of sweet peaches. Give one of these a try or see which restaurants and caterers are prepping these sweet sensations for you right now!

Peaches, originally from China, are among the most popular fruits grown in the United States. They're the state fruit of Georgia and South Carolina—though not of California, which is the largest producer. There are two main varieties: clingstone (usually canned) and freestone, which is easier to pit. Yellow peaches have a brighter acidity and white peaches have a sweeter, more floral flavor.

Buying Peaches:
Don't be taken in by that come-hither blush—it's simply the part of the fruit that was facing the sun when it was on the tree. The best way to pick a peach is by aroma—the headier and sweeter-smelling the better. Choose firm but slightly soft fruit that smells sweet; pass on peaches with soft spots. Avoid hard or greenish peaches, which were picked too early and likely won't ripen well. Store peaches at room temperature until ripe.

How to use:
Peach skin adds beautiful color when the fruit is baked into pies, tarts, and jams. The skin is good for you, too, especially if you buy organic fruit. But it's fairly easy to remove the skin, provided the peach is very ripe. Start at the stem end, separating a bit of skin from the flesh with a sharp paring knife. Then pull the skin off in strips.

You can also give the peaches a 15- to 30-second dunk in boiling water, then plunge them into a bowl of ice water to prevent cooking. When they're cool enough to handle, the skins will peel off quite easily. A peach discolors quickly when it's cut and exposed to air. To prevent browning, sprinkle the fruit with a little lemon juice.

Storing:
Keep on the counter in a single layer with breathing space until fully ripe. Refrigerate for up to one week; serve at room temperature. Or refrigerate first to delay ripening.

Tribute to Carnegie's in Ballard

Recently we celebrated a special occasion at what turned out to be an incredible venue - Carnegie's in Ballard on Market Street. We knew we could anticipate a good evening, however they exceeded any of our expectations in, atmosphere and cuisine. The service was absolutely impeccable.

If you have not had the good fortune to step into Carnegies, do yourself this favor and put them on your list of "must dos". For those of you familiar with Ballard, you will recognize it immediately as the 100 plus year old building given to the City by Carnegies as a library. Over the years, it has been home to various types of businesses and currently the grandnous of the main floor is both a full service restaurant as well as a venue you can reserve for a special event. This is one of those venues that can be setup for so many types of arrangements, as it has three main distinct areas that work well together as one total venue, or can be setup for individual requirements. We had our event in the Eastroom, while the Westroom catered to their restaurant patrons. We found one exceptional compliment to Carnegie's, as at no time were we ever aware of their restaurant patrons, due to the uniqueness of the room setups and the beautiful curved glass walls.
The food itself was exceptional from the Coq Au Vin, to the Rack of Lamb Dijonaise. Bon Appetit!

Create the look:

The Decor: We like choosing simple decor items that can also carry you into the Christmas season. So stick with fruits and vegetables and dark greens as your design backdrop.

The Food: When it comes to planning a meal for a large group, don't try to do everything yourself. Ask your guests to bring a side dish, and don't feel like you are backing out of the responsibilities by asking others to help out with the meal. Remember, it is Thanksgiving after all, so let your friends give. Of course, there is always the main staple, the infamous turkey. If you are a Tom Douglas mini-me, go ahead and try to make your own frozen/thawed turkey with all the dressings. But if you are like us, consider a catered turkey or a pre-cooked turkey from Honeybaked Ham. Add your own garnishes, and be sure to throw away any evidence of a "store bought" bird so your guests will never know. And, if nothing else, ditch the canned cranberry sauce for the real thing. It's pretty simple to make and you can gloat that you made it from scratch all night long.


The Entertainment: How often do you have all your friends and family together? Not that often right, so make the most of it. Pull out some "family fun" games and stick Miracle on 34th Street in the dvd player. (Yes, we realize this is a "Christmas" movie, but the movie starts out depicting the Macy's Thanksgiving Day Parade, so work with us here).

The Mood: From the moment your guests step inside your welcoming home, make sure they are bombarded (that's right, we said bombarded) with the scent of the holidays. Our pick is the lovely scent of spiced pumpkin, which can also carry you right into the Christmas season. Create the scent with burning oil, candles and room sprays and add extra touches with scented soaps and lotions in the bathroom.

The Booze: Be adventurous and try out a new fall-themed cocktail like spiked hot cider, pecan martini or pomegranate mint mojito. What other time of year can you try something so festive?

Get Inspired! An Adult Halloween Party

Whoever said Halloween was for kids was clearly mistaken. We'd like to introduce our new "Get Inspired!" series of party planning inspiration boards to help you get your creative juices flowing for your own happening events. After all, we are entering the busiest season of all, jam-packed with one holiday after another. So let's get started with our first board of the season!

Let's get down to business...

The Colors: Go classic orange and black. Since orange is not a color most people use often, select accent pieces like napkins, candlesticks and small decorations that are orange in color. Then choose black items that are more recyclable like your chairs, table linens and candlesticks to complete the look.

The Decor: Halloween is a pretty simple holiday to find decorations for. But if you have the time and energy, try simple crafts for your decorations like pumpkin carving, glittered votive candle holders and edible spooky snacks. Homemade decorations are far more interesting and impressive.

The Entertainment: What would a Halloween party be without a scary film? We checked AFI's top 50 horror films and the film Psycho topped the list. Even if you aren't all going to sit down and watch it intently, stick it in your dvd player and let it run. Just the screams and scary music will add to the overall abiance.

The Food: Plan a meal that allows people to gather around the table, talk and mingle. A formal sitdown dinner is just not appropriate for a Halloween party. Consider a fondue party with cheddar cheese dip. It's a fun and tasty activity, plus it matches your color scheme!

The Fun: Since it is a Halloween Party after all, costumes are a must! Give an award for the best costume and the most creative costume. It will turn your event into a competition, encouraging your guests to step it up a notch. And since you are the awesome party planner that you are, we suggest going as Mr. or Mrs. Incredible!

I Ate An Obama On Sunday And A McCain On Tuesday

In less than a month, our country will elect a new President of the United States. In the spirit of the season, candy makers are taking advantage of this sweet opportunity to offer politically inspired edible goodness. Check out what we've found below.

This election year, Byrd Cookie Company wants everyone to Vote With Taste! Get your campaign headquarters ready with our selection of Democrat or Republican tins filled with Key Lime Coolers (left). Show your patriotic spirit with this red, white and blue tin collection! They are sure to be a hit with your guests at any election event this year!

Made with the traditional Japanese art of kumi ame (rolled candy), Kai's Candy Campaign ‘08 candies (below) are here to add some fun to the race for the Presidency. Each candy is individually wrapped, and the lollipops come on super long 8" sticks. The flavors are similar to American hard candies, but with a more mild flavor. But look out for the small Obama candies - they have a zesty mint flavor!


If candy is not quite your thing, you may be more interested in a mocha cafe drink with special packaging to promote Senator McCain and Senator Obama from McStevens.

Enjoy Your Staycation


Have you ever noticed that the city you live in is the one city you hardly know? In other words, when you go on a vacation to another place you find out what the main attractions are and plan sightseeing tours or trips to go see them. But in the own city you live in you often get caught up in your day-to-day agenda and neglect its own attractions and so-called "touristy" activities.

With a three-day weekend coming up, here's your chance to get re-acquainted with your city. For those of you who live in the Seattle area, here are the top six tourist attractions according to About.com to get out there and explore!

1. An afternoon on Broadway in Capitol Hill
Capitol Hill is the most densely and diversely populated neighborhood in Seattle. Broadway, the main thoroughfare, has the most active sidewalk scene, day or night, in the city. It is a bustling area that is home to the entire cross-section of Seattle’s population. A trip down Broadway will basically introduce you to everyone you share the city with. It also has many diverse shops and restaurants worth visiting. Spend an afternoon shopping on Broadway and grab an inexpensive lunch.

2. Starbucks at the Space Needle
When is the last time you took the 41-second ride to the top of the Space Needle? Do you even remember how beautiful Mt. Rainier looks from there? If not, its time to pull out the $17 (yeah its still a little pricey) and make the trip up the Seattle icon. Once you're at the top, make sure to enjoy a local favorite Starbuck's cup-a-joe.

3. Washington State Ferries (WSF)
WSF offers an inexpensive way to see Seattle from the water. You can catch the ferry to Bremerton at Pier 52 for $6.50 round-trip as a passenger. It will cost an extra $7.60 each way to take your car. The ride is 60 minutes each way with a 20-minute stop in Bremerton. It offers excellent views of Blake Island, the naval shipyard in Bremerton, and downtown Seattle from the water upon your return. Pack a lunch and enjoy a better time than you would have had on an expensive Elliott Bay Cruise. If you live in the northend, you could also try the Edmonds Ferry or the Mukilteo/Clinton Ferry. The rides are much shorter, but offer the same beautiful sights and fun places to explore on the other side.

4. Pike Place Public Market
You know we had to add it to the list. Pike Place Market is still one of the most famous Seattle hot-spots and for good reason. Adults love it. Kids love it. Dogs love it. What is not to love. Pick up a local bouquet of fresh flowers. Watch fish flying through the air. Shop around the local craft stands. Sit and people watch. The Pike Place Market is rite of passage for any true Seattle native or adoptee and is truly the place that defines the city.

5. Pioneer Square and Underground Tour
In 1853, Seattle was founded in the area now known as Pioneer Square. An area of about ten square blocks serves as both the center of Seattle's nightlife and history. You can see and learn a lot without covering much ground by taking a Walking Tour of Pioneer Square. Go on Bill Speidel's Underground Tour first. The 90-minute, $11 guided-tour will help you get your bearings and allow you to experience things in chronological order. It is the best activity in Seattle that nobody knows about.

6. Bumbershoot
Bumbershoot is of course not a permanent fixture in Seattle, but it is certainly one of the main attractions during Labor Day weekend. Venture to Seattle Center, the 74-acre park located in the heart of the Pacific Northwest to find a festival that has it all. Bumbershoot, as the name implies, umbrellas a number of artists from different genres representing the best in music, film, comedy, theater, spoken word, dance, visual, performance and literary arts.

Catering Trends

We read a recent article in the Business Journal featuring an interview with a catering director named Franck Mannechez out of San Antonio, Texas. Frank is also the president of NACE (National Association of Catering Executives) an organization that is very well known here in the Northwest. We found it to be interesting that the same trends happening in a different part of the country also seem to be showing up in the Northwest.

We have included snippets of the interview below.

Q. What is the latest food trend that catering customers are demanding today?

A. No more junk food! Consumers are looking for more locally grown foods and support a healthier environment and a healthier lifestyle. People want food that is convenient, fills them up, tastes good and is not fattening.

Q. For a long time, it was chicken, chicken, chicken. Now it's beef, beef, beef. What's up with that?

A. I think people have finally passed the stage of being afraid of beef. We don't hear anything anymore about Mad Cow.

Q. What is the latest decorating trend in catering today?

A. Lighting! It is amazing what a few spotlights can do to a room. You can match the color of the light either with your centerpieces or your linen, and it will accentuate the color -- making it look even more beautiful. Your room will suddenly have a new dimension.

Q. What is your favorite meal to serve for a business event?

A. Everybody has their own favorite meal that they like to serve at every event because it has a great flavor or it is easy to serve. My personal favorite is a mixed grille of tenderloin of beef medallion with forest mushroom sauce and quartet of gulf shrimp baked in pistachio butter. For a business event, though, it is a little different because you have to consider many factors in order to serve the "right food." Factors range from theme, nutritional preferences, allergies, to event length.

Q. How are caterers dealing with the increased food and transportation costs? Are they raising prices or tweaking other parts of their business?

A. Every catering event is a negotiation and a relationship, and you have to find out what is important to the client first. If cost is not a factor, then it is easy; if it is, we will have to guide the client towards what would be the best for their budget and our costs. Here at the Dominion Country Club we are holding on raising prices. Instead we are trying to negotiate with our fellow NACE (National Association of Catering Executives) members, making deals to help cut some costs and at the same time give them more business. With increased pressure on our nation's food suppliers, though, eventually the rising costs will be passed on to the end user.

Sail Away To Honor Days


It is our pleasure to announce Tillicum Village’s participation in the Native American Honor Days 2008. Animaniacs

Got a theme for your next event? Here is one you may not have thought about. Lately we've been noticing some furry friends hopping, crawling, swimming, and flying into event theme decor. That's right, event table decor is taking it to the animals.

We found just a few examples at one of our favorite independent art websites, Elsewares. Check out these letterpressed coasters below from Sesame Letterpress. Sesame Letterpress is a letterpress studio in Brooklyn, NY (right under the Brooklyn Bridge, actually!). It's there that husband and wife Matt Heindl and Breck Hostetter make all their letterpress goodness.



We also loved these studio salad plates from Working Glass Studio. A fresh new concept in the art of dining. These sturdy, colorful, square salad plates are made of lightweight melamine. They're a perfect choice for outdoor dining or to combine with other tableware for an eclectic mix. Sold individually so you can build your own set! Working Class Studio is the product development arm of the Savannah College of Art and Design, giving students real world experience designing and marketing home accessories and lifestyle products.

Lastly, check out these totally chic and incredibly unique serving trays from IBride (below). These trays combine magical imagery with intricate lattice work, and are perfect for serving the special friends in your life, or hanging on your wall as a stunning accent. Each tray is constructed to last using a century old technique which applies high pressure laminate to an environmentally friendly, recycled wood core. They are sturdy and gorgeous, and when we heard how they were made, we had to have them.

Saving Lives, One Sip At A Time


If you've ever seen the CBS show Survivor you've probably seen the contestants travel to a water source and boil the water they collect before they can drink it in order to decontaminate and filtrate the water from bacteria, viruses, parasites, fungi and all other microbiological waterborne pathogens.
